Tall Acres Fruit Cake

1 pound granulated sugar
10 eggs, room temperature
1 1/2 cups butter, softened
1 cup honey
1 cup red wine, room temperature
1 teaspoon nutmeg
1 teaspoon cinnamon
1 pound all-purpose flour, sifted three times
2 teaspoons salt
3 pounds seedless raisins
1/2 pound candied cherries
1 pound mincemeat
1/4 pound citron
2 pounds chopped nuts of choice
1/2 pound candied pineapple
Rum or Brandy*
Oven:  250º

In very large bowl, beat together first 9 items until creamy and smooth.  Roll each of next 6 items in a little flour then gently stir into batter one item at a time.  Bake in pans that have been greased and lined with greased brown paper.  Bake 3 to 4 hours or until knife inserted in center comes out clean.  Cool 10 minutes in pans then while still warm wrap in rum or brandy-soaked cheesecloth and store in airtight container.  Re-soak cloth weekly for 3 weeks.

*may substitute orange juice
