Tea Cakes

1 cup granulated sugar
1 whole egg
1 1/2 cups butter, partially melted
1/4 cup buttermilk
1 tablespoon baking soda
1 tablespoon vanilla extract
3 1/2 cups sifted all-purpose flour
Oven:  4000

Beat egg, sugar and butter together until well blended.  Combine soda with buttermilk and add to mixture. Stir in vanilla and work in the flour until blended just enough to handle.  Roll out lightly and cut into desired shapes.  Bake until lightly browned.  Cool or racks, icing if desired.
