Hash Browned Potatoes

4 medium potatoes, peeled, rinsed and shredded
1 small onion, minced

In large skillet heat 3 tablespoons vegetable oil. Combine potatoes and onion and press evenly into skillet with spatula. Add 1 tablespoon water, cover with tight fitting lid and cook over medium heat for 10 minutes. Remove lid, turn potatoes over, replace lid and cook an additional 7-10 minutes until done.
