Dried Tomato Subs
*This is a recipe done at least 24 hours ahead.For each sandwich you will need:
1 fresh soft loaf of French bread, size optional
Dried tomatoes
Fresh or frozen sweet peppers of your choice
Sautéed onion, optional
Grated Parmesan cheese
Olive oil
Minced garlic (the kind in the jar)
Freshly ground black pepperSlice the loaf lengthwise and slightly hollow out the inside. Brush with a mixture of the olive oil, garlic to taste and a little black pepper. Layer the tomatoes, peppers and onions in the loaf, dust liberally with the Parmesan, then wrap the loaf securely in aluminum foil and freeze the sandwich. To prepare, simply pop the wrapped frozen loaf in the oven at 200° and allow to heat slowly for 2-3 hours.
