Potatoes Au Gratin
4 cups potatoes, sliced
4 tablespoons margarine
4 tablespoons flour
2 cups milk
2 cups cheddar cheese, grated
Salt and pepper to taste
Precook potatoes until almost tender; drain. To prepare sauce heat butter in small saucepan until melted. Stir in flour and cook, stirring constantly, for 2 minutes. Add 1 cup of the milk, stirring hard until smooth. Add the remaining 1 cup of milk and cook, stirring until smooth and thick.
Lay one half the potatoes in the bottom of casserole dish. Sprinkle with ¾ cup of the cheese and pour half the liquid mixture over this. Add remaining potatoes and repeat. Season, dot with some butter and bake 30 minutes. Sprinkle remaining cheese over top and bake until bubbly and browned.
