Spinach, Mushrooms & Garlic
6 ounces mushrooms of choice, roughly chopped
Extra virgin olive oil, about 2 Tablespoons
1 Tablespoon butter or butter substitute
1 large bag baby spinach leaves, rinsed and drained
2-3 large cloves garlic, peeled and minced
Melt butter or substitute with olive oil in medium skillet over medium flame. Saute garlic about 2 minutes; add mushrooms and continue cooking over medium low heat until mushrooms begin to wilt. Toss in baby spinach, cover, reduce heat to simmer and steam until just wilted. Serves 4.
