Perfect White Cake ¾ cup shortening
1 ½ cups sugar
1 ½ teaspoons vanilla
2 ¼ cups cake flour
3 teaspoons baking powder
1 teaspoon salt
1 cup whole milk
5 stiffly beaten egg whites
Oven: 350°Cream shortening and sugar until light and fluffy. Stir in vanilla. Sift dry ingredients together and add alternately with milk, beating well after each addition. Beat until creamy. Gently stir in egg whites. Bake in two greased and floured pans about 20 minutes. Cool in pans 10 minutes before removing to racks to cool completely before frosting.
