White Christmas Cake

1/2 cup water
4 ounces white confectionery chocolate
1 cup butter, softened
2 cups granulated sugar
4 eggs, separated
1 tablespoon vanilla extract
2 1/2 cups cake flour
1 teaspoon baking soda
1 cup buttermilk
1 cup flaked coconut
1 cup chopped pecans
1 recipe Christmas Frosting
Oven: 350º

In saucepan, bring the water to a boil; remove from heat; stirring in confectionery chocolate until melted.  Cool for 20 minutes. In large mixing bowl, cream butter and sugar until light and fluffy; add egg yolks; blending well.  Beat in chocolate and vanilla.  Stir together flour and baking soda; add to creamed mixture alternately with buttermilk.  Beat until smooth.  Stir in coconut and pecans.  Beat egg whites until stiff peaks form; fold into batter. Pour into three greased and floured 8-inch square baking pans.  Bake 25-30 minutes or until cake tests done.  Cool in pans 10 minutes; remove to wire rack to cool completely. Frost with Christmas Frosting, decorating as desired with candy holly, etc.
