Best Yellow Cake Recipe

1/2 cup shortening
1 1/2 cups granulated sugar
1 teaspoon vanilla extract
2 whole eggs
2 1/4 cups sifted cake flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1 1/8 cups cold milk
Oven:  375º

Cream shortening and sugar until light and fluffy on medium speed of electric mixer.  Add vanilla then add eggs one at a time, beating well after each addition.  Sift together the flour, baking powder and salt and alternately to creamed mixture with cold milk, beginning and ending with dry ingredients.  Bake in greased and lightly floured 9-inch round pans about 25 minutes.  Cool 10 minutes in pans before removing to racks to cool completely.
