Italian Lemon Cookies


3/4 cup butter, softened
1/2 cup granulated sugar
1 large egg
1 tablespoon vanilla
3 tablespoons lemon juice
1 teaspoon lemon zest
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon baking powder
Fresh Lemon Glaze
Oven:  350°

In a mixing bowl cream together butter and sugar until light and fluffy. Beat in egg, vanilla, lemon juice and lemon zest and mix until combined. In a separate mixing bowl, mix together flour, baking soda, salt and baking powder. Incorporate flour mixture into butter mixture and mix just until combined; don't over mix. Drop by rounded teaspoonfulls onto light greased cookie sheets 2 inches apart. Bake approximately 10-12 minutes or until edges are just starting to turn golden brown. Remove to racks to cool completely before topping with Lemon Glaze.
