Perfect Coconut Cake
1 recipe Perfect White Cake
1 recipe Seven Minute Frosting
1 16-ounce bag grated fresh coconut
Prepare Perfect White Cake according to directions. Frost bottom layer with Seven Minute Frosting. Sprinkle generously with coconut. Place second layer on top, and repeat, gently pressing coconut into frosting all around sides and top. Cake is best if allowed to chill overnight. Do not store at room temperature; keep chilled.
