Grace Craig's Apple Pie
*While spending a summer with my paternal aunt/uncle
in my youth, I finally found an apple pie that I liked!
1 recipe double-crust pie pastry*
4 cups peeled, cored and thinly sliced tart apples
1/2 cup granulated sugar
Dash apple pie spice or cinnamon
1/4 cup flour
Toss fruit with sugar, spice and flour and allow to set 15 minutes. Pack completely (will be highly mounded) into pie plate lined with pastry. Cover with top crust, seal, and flute, cut vents and bake for about 1 hour or until golden and bubbly. If desired, rub with butter after removing from oven.
For a glazed crust, before placing in oven and 15 minutes before removing from oven, brush crust with a mixture of 1 part water to 3 parts sugar.
